This pumpkin infused vodka recipe just might be the most basic thing we have ever seen, and we're in love. It's a full-bodied, hearty liquor that pairs wonderfully with Ugg boots and an oversized knit cardigan. It's quite good neat, but best enjoyed in a nonfat, dairy free latte, sipped with both hands while Instagramming a picture of a tree.
Here's what you'll need:
750 grams peeled pumpkin (1 gram per mL of vodka)
750 mL vodka
Pumpkin pie spice
First, roast the pumpkin at 200 C (400F) for 45 minutes, brushing with honey if you so choose.
Then put it in a pot with a few dashes of pumpkin pie spice, add just enough water to cover, and simmer for another hour.
Now it's time to add the vodka.
After the pumpkin has cooled, pour it and the vodka into a blender and blend until smooth. Let that chill overnight, then strain out the pulp with a fine mesh strainer or cheesecloth and store in the fridge up to a month.
You may have a bit more pumpkin vodka than you can fit back into the original bottle, but you probably don't need us to tell you what to do with it.
