Make Salted Caramel Fudge in 20 Minutes!

• 21.2 oz sugar

• 8.8 oz double cream

• 1.8 oz unsalted butter

• Sea salt

1. Melt 7 oz of the sugar in a pan over a medium heat until golden, then beat in the remaining sugar, along with the double cream, butter and 1 teaspoon of sea salt.

2. Cook, stirring, over a medium-high heat, until it reaches 118C on a sugar thermometer.

3. Remove from the heat and beat with an electric mixer until thick. Then pour this into a lined 8’’ x 8’’ tin and spread out evenly with a spatula.

4. Leave this to cool and then leave in the fridge for 2 to 3 hours to set. Sprinkle with a pinch of sea salt, cut into 1’’ squares and serve.
