The Time-Saving Magic of Herb Paste

If you’re anything like me, you have a few herb/spice blends that make you feel like pele in the kitchen. No matter what I’m cooking, an easy mix of cilantro, chives, and scallions turns a typical culinary 8 up to a **flawless 11. There’s just a few problems-- my fancy fresh herbs never stay perky until I can muster up the willpower to go shopping again. And what if I haven’t had enough wine to do any more than put a piece of chicken in the oven for 20 minutes? Why do the blandest dinners follow the longest days?

Luckily there’s an easy solution: herb paste. Just take your favorite fresh herbs (or any ingredients you use on the regular) and mix them in a blender or food processor, adding just enough olive oil to make a paste. Pour it into an ice cube tray and freeze for as long as you want! Then whenever you want to season a dish to perfection, throw on a cube and taste the magic of herb paste!
