This Vegan Quiche Is Even Better Than the Original!

Even though there are all sorts of benefits to a vegan(ish) lifestyle, many of us still feel like it's too much of a stretch to give up our favorite comfort foods and make the switch. But with this amazing vegan quiche recipe, you can indulge safely with a healthy, ethical alternative that's even better than the animal version. The secret is substituting tofu for the eggs and cheese in a traditional quiche recipe, while more than making up for the difference with flavorful additions like mushrooms and onion. INGREDIENTS:

Pastry

• 3 cups wholemeal four

• 1 pinch of salt

• 1/2 cup very cold vegan margarine

• 2 tbsp. cold water

Filling

• 2 cups fresh spinach

• 2 tbsp. vegetable oil

• 1 large onion

• 1 ½ cups mushrooms

• 1 packet (12oz) pressed tofu

• 1/2 tbsp. dried dill, or to taste

• Fresh parsley

• Seasoning to taste

• 2 tbsp. sunflower seeds

DIRECTIONS:

1. Preheat the oven to 375F.

2. Chop your onion, slice your mushrooms, wash and shred the spinach and finely chop the parsley in preparation for later.

3. To make the pastry, stir the flour and salt and then use your fingers to rub in the margarine until the mixture begins to look like breadcrumbs.

4. Add water to bind it into a dough and then wrap this up in cling film and leave in the fridge for 30 minutes.

5. Cook the spinach in a saucepan with very little water just until soft.

6. Heat the oil and fry the onion until it softens and then add mushrooms.

7. Separately, either mash the tofu or blend it to make a purée. To your tofu, add dill, plenty of parsley and seasoning.

8. Add the mushroom and spinach to this mixture and stir.

9. On a floured board, roll out the pastry and use it to line a medium-sized flan dish.

10. Pour your filling into the dough, Smooth the top and sprinkle with sunflower seeds.

11. Bake this for half an hour or until the pastry is crisp.
